Ingredients

  

  • 24 large or jumbo shrimp
  • 1 lb. lump crabmeat
  • 1 large egg
  • ¼ cup green bell pepper diced
  • ¼ cup red bell pepper diced
  • ½ cup onion diced
  • 12 snack crackers grinded
  • ½ cup breadcrumbs
  • ½ cup mayonnaise
  • ¼ tsp. cayenne pepper
  • ½ tsp. lemon zest
  • 1 tsp. Old Bay seasoning
  • 2 tbs. butter
  • 2 tbs. melted butter
  • Salt and pepper as necessary

Instructions

 

  • Set a non-stick pan on medium to high heat and melt the butter. Add green bell pepper, red bell pepper, and onion then cook for around 3 minutes. Set it aside to allow it to cool down.
  • Separate the crabmeat from the shell then put it into a bowl. Add egg, crushed snack crackers, breadcrumbs, cayenne pepper, lemon zest, and Old Bay seasoning. Mix gently.
  • Season with salt and pepper. Refrigerate for as long as needed.
  • Clean the shrimp by peeling the skin off but without removing the tail. Cut deeper along the deveining line and remove the veins.
  • Lay a parchment paper on a baking tray and set the shrimp side down like a butterfly. Press the shrimp to make it flatter.
  • Take 1 tablespoon of the crab mixture and shape it into a ball, then set it on top of the shrimp. Secure it by pushing the tail into its top.
  • Repeat until all the shrimps are stuffed.
  • Drip melted butter on top of the shrimp then bake the Razzoo's stuffed shrimp for 15 minutes in a 350ºF oven.
