  • ¼ cup Argo corn starch
  • 1 cup sugar
  • 1-1.5 cups cold water
  • Grated peel from one lemon
  • ¼ cup lemon juice
  • 3 egg yolks beaten slightly
  • 1 tbsp margarine or butter
  • 9- inch pie crust baked
  • 3 egg whites
  • 1 tsp Argo corn starch
  • 1/3 cup sugar

Instructions

 

  • Preheat your oven to 350oF
  • In a medium-sized saucepan, combine ¼ cup Argo corn starch and 1 cup sugar. Stir in water until it turns out smooth. Then, stir in 3 egg yolks as prepared.
  • Have it heated over medium heat while stirring constantly. Boil it for around 1 minute.
  • Stir in lemon juice, butter, and lemon peel.
  • Once the steps 1-4 are done, prepare the hot lemon filling into the pie crust. Now proceed into making the meringue.
  • In a smaller bowl, beat egg whites. You can use hand, but it is advised to beat the egg whites using mixer at a high speed. You need to make sure that the egg whites turn foamy.
  • Then, mix in 1 tsp Argo corn starch and 1/3 cup sugar. Mix it in gradually while continue beating in the egg whites. Stop beating until the stiff peaks are formed.
  • Over the hot filling, spread the meringue you have just made. Seal it to the crust edge.
  • As the preheated oven ready, bake the pie for around 15-20 minutes or until it turns golden. Take it out from the oven, then let cool on room temperature for around 30 minutes.
  • Lastly, you can have it refrigerate for 3 hours before you serve it.
