Chocolate whoopie pie, what is it? It is two saucer-shaped rounds of chocolate cake sandwiched around creamy and delicious filling. This dish is so popular in New England and around Amish countries as well. Later on, this whoopie pie has gradually been spreading throughout many countries. This pie is a really delicious treat but many people avoid it because it has many calories. But, it still is delicious and mouthwatering. Ingredients: 

Cakes

  • 8 tbs butter (about 113gr) at room temperature or at least 65°F
  • 1 cup (213g) packed brown sugar
  • 2 1/3 cups (about 283g) King Arthur Unbleached All-Purpose Flour
  • 1 cup ( about 227g) milk, at room temperature
  • ½  cup ( about 43g) Dutch-process cocoa
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¾  tsp salt
  • 1 tsp vanilla extract
  • 1 large egg, at room temperature
  • 1 tsp espresso powder, optional

Filling

  • 1 cup (177g) vegetable shortening
  • 1 cup (113g) confectioners’ sugar or glazing sugar if you prefer
  • 1 ½ tsp vanilla extract
  • ¼  tsp salt dissolved in 1 tbs water
  • 1 1/3 cups (167g) Marshmallow Fluff or 1 1/3 cups (113g) marshmallow crème if you prefer

Direction: 

The first thing that you need to do to make chocolate whoopie pie is to preheat your oven to 350° F. You need to grease it lightly with two baking sheets or you can also line it with a parchment sheet.

To make the cake: Beat together butter, espresso powder, baking powder, sugar, baking soda, salt and vanilla until it becomes smooth. After that, add eggs and continue to beat them until smooth. And then, add the cocoa and stir it till all the mixture is well combined. Add the flour to the bowl alternately with the milk and then continue to beat them until smooth. Don’t forget to scrape the sides and the bottom of the bowl as well and then beat them again shortly to soften and combine any rough scrapings.

Next, drop the dough onto the prepared baking sheets. You need to drop the dough about ¼ cup full or you can use the muffin scoop to get the exact measurements. Make sure to leave plenty of room between cakes because they will expand.

Last but not least, you need to bake them for about 15-16 minutes until they are baked well and firm to touch. After that, move them from the oven and let them cool on the pans. While they are still lukewarm, you can separate them from the pan using spatula. After that, let them cool entirely.

To make filling: In a large bowl, put the shortening, marshmallow, and sugar, beat them together until they are well combined.

Next, dissolve the salt in 1 tablespoon of water, and then add it to the marshmallow mixture. After that add the vanilla to the mixture and then beat all of them until smooth.

Last but not least, take one cake and then spread it’s flat side with filling. After that top the leftover cake with the ones that already spread with the filling, don’t forget to put the flat side toward the one with filling. After that, wrap them individually until they are ready to serve. You can use plastic wrap for this.
