  4. Brush two 12-cups muffin trays with oil or spray them with cooking spray. Put them aside.
  5. In a large bowl, combine eggs and milk until they are incorporated well. Add red and green bell peppers into egg and milk mixture.
  6. Put around ¼ cup of dirty rice mix into each cup of muffin tray.
  7. Pour egg and milk mixture into each cup. Make sure that they are even in volume.
  8. Bake inside a preheated oven at 350º (177ºC) for around twenty minutes or until the egg mixture has set.
