Ingredients

  

  • 4 slices of slices of bacon cut in ¼ inch length
  • 3 cloves garlic minced
  • ½ whole large onion chopped
  • 2 pounds of green beans cut off the ends
  • ½ cup half and half
  • 2 ½ cups of whole milk
  • 4 tablespoons of butter
  • 4 tablespoons of all-purpose flour
  • teaspoon of salt may add later
  • 1/8 teaspoon of cayenne pepper
  • 1 cup sharp cheddar cheese grated
  • 1 jar sliced pimentos
  • 1 cup of panko bread crumbs

Instructions

 

  • Start by preparing the green beans. You can cut the beans in half before blanching them. Boil water in a pot, add some salt, and cook the beans for up to four minutes. Use a slotted spoon to transfer the beans into a bowl of iced water. It is to stop the cooking process and keep the bright green color.
  • Cook the bacon in a skillet for about two minutes before you add garlic and onions. Keep stirring to cook them until the bacon is cooked and the onions are golden brown. Set it aside and use a new saucepan over the fire.
  • Use medium heat and start melting the butter. Add the flour and quickly whisk them to combine. Continue cooking and pour in half-and-half and milk. Stir to mix them well until the texture gets thick. Add salt, cayenne pepper, black pepper, and cheese. If you think the mixture is too thick, you can splash in chicken broth to thin the sauce. When the sauce is ready you can turn off the heat.
  • Add pimentos as well as the bacon and onion mix into the sauce. Stir them gently before you add in the green beans. Continue stirring to mix them well. Pour into a baking dish, and spread panko crumbs evenly on top of the mix. Bake for 30 minutes at 350oF or until the panko gets golden brown.

Notes

Green beans can be notorious to cook, and the crispiness may even push your children to dislike the veggies even more. If you want the beans to be softer, you can cook them a bit longer but remember to not overcook them.
