  • 4-5 pounds beef tenderloin trimmed and tied
  • 4 teaspoons kosher salt
  • 2 teaspoons fresh ground pepper
  • 3/4 stick unsalted butter melted
  • 1 tablespoon horseradish
  • 3 tablespoons dijon mustard
  • 1 1/2 cups mayonnaise
  • 1 1/2 tablespoons full-grain mustard
  • 1/4 teaspoon salt
  • 1/3 cups sour cream

Instructions

 

  • Start by preheating your oven to 275 Fahrenheit. Cover your baking sheet with aluminum foil. And now start working on your meat.
  • Use a paper towel or a clean kitchen towel to pat the meat to dry. Then start rubbing the butter all around the beef. Once done, lightly rub the salt and pepper all over the meat.
  • Put the tenderloin on the baking sheet and roast for one or one and a quarter-hour. You can check a cooking thermometer. If it reads 130 degrees Fahrenheit, you can turn off your oven and pull the meat out.
  • Put an aluminum foil to wrap the meat tightly and let it sit for 15 minutes. Unwrap the foil cover and let the meat rest at room temperature.
  • While you let the beef rest, you can start making the sauce. Mix all ingredients in a bowl until they blend well. You can store the sauce in the refrigerator until serving time.
  • You can serve the beef warm or cold. After resting the meat, you can start cutting it into portions. Serve the beef with the sauce and other garnish that you like.
