The Marcella Hazan’s Bolognese sauce recipe below made an appearance in Hazan’s “The Essentials of Classic Italian Cuisine” book, so it is an authentic one. Here’s the ingredients and cooking steps to follow if you want to recreate the Marcella Hazan’s Bolognese sauce at home:

Ingredients

  

  • 1 ¼ to 1 ½ lbs. pasta
  • 1 ½ cups canned Italian plum tomatoes chopped and with the juice
  • ¾ lbs. ground beef chuck alternatively pork with 1:2 parts comparison to beef
  • 1 cup dry white wine
  • 1 cup whole milk
  • 2/3 cup carrot chopped
  • 2/3 cup celery chopped
  • ½ cup onion chopped
  • 1 tbs. vegetable oil
  • Salt
  • Freshly grounded black pepper
  • Butter
  • Freshly grated Parmigiano-Reggiano cheese

Instructions

 

  • Add butter, oil, and chopped onion in a pot. Cook and stir on a medium heat, until the onion turns translucent before adding chopped carrot and celery, then cook for another 2 minutes.
  • Add ground beef, salt and pepper. Crumble, stir, and cook the mixture until the beef is no longer red or raw.
  • Pour in milk and allow it to simmer while frequently stirring until it forms bubbles.
  • Add around 1/8 tsp. of nutmeg and stir well.
  • Pour the white wine and allow it to simmer until the wine has evaporated.
  • Add tomato and stir the mix well until the tomatoes form bubble, then lower the heat.
  • Let the mix cook uncovered for about three hours while frequently stirring it.
  • Add ½ cup of water as necessary to keep the sauce from sticking. By the end, the water must be evaporated and the sauce must separate from the meat’s fat.
  • Check the taste for salt and add some if necessary.
  • Toss the sauce with cooked and drained pasta, add another tablespoon of butter.
  • Serve with addition of parmesan cheese on the side.

Notes

If you are busy at the house with some chores and cannot leave, this recipe is perfect to make. You just need to prep the work and stir the cook every now and then.
