Ingredients:
Spices for the chicken:
- 1/2 teaspoon red pepper flakes, crushed
- 1 tablespoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 2 teaspoons oregano
- 1 tablespoon ground cumin
Main ingredients:
- 4 boneless, skinless chicken breasts
- 3 cups chicken broth
- 1/2 cup heavy cream
- 3 tablespoons Olive oil
- 2 cans (15-ounce each) of cannellini beans, drain and rinse
- 1 (10-ounce) bag of frozen corn
- 2 (4-ounce each) cans of chopped green chiles
- 1 tablespoon masa harina
- 4-6 lime wedges
- 1 chopped avocado
- 2 cups of Monterrey Jack
How to make:
- Start mixing all of the spices for the chicken in a small bowl. Then set your pressure cooker on saute, and put olive oil and chicken in the pot. Sprinkle the spice mix and stir until the chicken starts to brown.
- Add broth to the pot, and stir a bit more before you put the lid on. Set the valve to seal, and set the cooker to manual cooking for 6 minutes.
- After six minutes, release the steam with the quick-release valve. Take out the chicken to shred it with forks.
- In another bowl, mix masa harina into the heavy cream until smooth. Then set the cooker back to saute as you return the chicken to the pot. Put in the heavy cream mix, corn, beans, and green chilis.
- It only takes about ten minutes until the chili is thick. You only need to stir it occasionally to prevent burning.
- And that’s it; now you have a pot full of white chicken chili. Serve the dish with cheese, avocado, and lime wedges.
