
We wait all year long for fresh ripened tomatoes as they taste unlike any you purchase at the store. Why is that? Well I am sure there are lots of reasons but the store bought tomatoes simply just don’t compare. So now that garden fresh tomatoes have arrived, what do we do with them all? Or should I ask, what do we do with the ones that actually make it into the kitchen as I know many don’t travel that far. Here are my favorites:

Caprese Salad
Layers of fresh ripened garden tomatoes, fresh mozzarella, basil leaves, my best olive oil, salt and pepper. For more flavor drizzle with good balsamic vinegar.

Roasted Tomato Salsa
Pan sear, roast or slightly blacken tomatoes and garlic cloves (skin on) on the grill. Core tomatoes and place in blender with peeled garlic, and jalapeños. Blend to desired consistency and stir in chopped fresh cilantro.

Garden Tomato, Mozzarella, Basil and Prosciutto Panini
Slice a rustic bread like a Ciabatta or Puliese about 1/2 inch thick. Layer cheese, tomatoes, basil and prosciutto and season with salt and fresh cracked black pepper. Stack sandwich and butter the outside of the bread. Place in hot skillet and heat until cheese is melted and you can’t wait any longer to eat it….Yum!
