Chocolate Peanut Butter Rice Krispie Balls

Ingredients
  

  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 cups of crispy rice cereal
  • 2 cups of crunchy peanut butter
  • 16 oz. chocolate candy coating
  • ½ cup unsalted butter softened.
  • ¼ cup of salted peanuts chopped roughly
  • ¼ cup of chocolate jimmies

Instructions
 

  • Prepare a large baking tray with parchment paper and set them aside. Then grab a large bowl to mix peanut butter and butter until they are one. Add the vanilla extract then gradually add sugar. Do half a cup at a time until you can form the dough.
  • Then add the rice cereal into the mix. If you think the dough is too heavy and needs a hand instead of a spatula, go ahead. Start forming the balls and place them on the baking tray you prepared earlier. Keep the balls in the freezer for about 20-30 minutes until they are set. We suggest you make the balls in 1-inch diameter, any smaller than you won’t enjoy coating it.
  • In the meantime, melt the candy-coating chocolate. Depending on the brand you use, the instruction may vary. Anyhow, don’t stray from the instruction and see if the chocolate has the right consistency. Keep it warm and take out the peanut butter balls from the freezer.
  • Use a toothpick or a dipper, start dipping the balls into the chocolate, and do it carefully to make sure you don’t miss any sides. Transfer them back to the tray and sprinkle chocolate jimmies or chopped peanuts right away. Let them cool and the chocolate is firm.

What Else Can I Do With The Recipe?

While the variation of healthy may differ, some recipes may swap the sugar with honey. You also can choose natural peanut butter or even homemade butter to make this dessert. Keep in mind that swapping ingredients means you need to adjust the measurement again. And since it has peanuts and other ingredients, you should check if you or your family member is allergic to peanuts.
