Traditional Babka
Follow this traditional Polish babka recipe and get yourself a gorgeously swirled baked loaf to serve on the upcoming Easter Sunday.
Ingredients
- 3 cups bread flour
- 3 eggs and 1 extra egg yolk
- ½ cup milk
- ½ cup butter melted
- 3 oz. dark chocolate chopped
- 6 tbs. butter
- 2 tbs. cocoa powder
- 1 tbs. active dry yeast
- 2 tbs. water
- 2 tbs. confectioners’ sugar
- 1 tsp. salt
- Granulated sugar
Instructions

tir milk, yeast, and granulated sugar in a bowl together and let it still for 10 minutes before mixing in ½ cup bread flour.

Stir the rest of the bread flour and salt in another bowl.

Use electric mixer with paddle attachment to beat the mixture with yeast on low speed, add the eggs and egg yolk one by one. Change into dough hook and combine the second mixture, then mix them on low speed.

Set the mixer on medium speed and mix ½ cup butter slowly for 10 minutes, before covering and allowing it to rest for one hour at room temperature.

To create the filling of this traditional babka recipe, mix chocolate and 6 tsp. butter to be melted for one minute in microwave on 50% power. Stir every 30-second interval until the mixture is all smooth and melted then add 1 tbs. flour, cocoa powder, and confectioners’ sugar. Whisk until smooth.

Preheat your oven to 350°F and prepare loaf pan sprayed with vegetable oil-based pan spray.

Prepare floured surface and move the dough on it, knead until smooth then allow it rested and covered for 10 minutes.

Prepare floured surface again and shape the dough into 20 x 12” rectangle, then put in the filling. Create cinnamon rolls-like roll up and enclose by pinches. Divide the log into two similar lengths of pieces, then twist them together and transfer it into the pan by shaping it into “S” form and tuck the ends beneath. Let it rise while being covered for 30 minutes.

Mix 3 tsb. Granulated sugar and water in a bowl to create sugar syrup, then microwave on high and stir it every 15 seconds, until you have dissolved sugar.

Reveal the load and back for 32 – 37 minutes then allow it to cool down for 5 minutes before brushing it with sugar syrup.
