If you are using the microwave, do it in intervals of 30-seconds to check the melting state.
  • You can actually create a double boiler-look alike cooking style by having a skillet that is filled with water. Have an ovenproof bowl or smaller pan within the water, and you should be able to melt the cheese. Check on the heat. It should be low, so you basically have a ‘gentle’ boil. Lowe heat will also ensure that water won’t splash up into your food.
  • When you want to add the pimento, make sure that you have drained the liquid first. Add it to the mixture after you have melted the cheese. 4 ounce of pimento should be enough. However, some people may feel that the consistency of the mixture is too thick. If you have the same thought, you can add the liquid (from the draining). The thickness (or runniness) of the cheese depends on personal preference, really, so it’s up to you. If you don’t need the liquid, you can easily toss it away.
