Easy Humus Recipe
But do you know that you can make hummus from scratch? It doesn't take long and you can refrigerate the rest.
- 1 can 15 ounces chickpeas, drain and rinse under running water. You also can use 1 1/2 cups of cooked chickpeas.
- 1/4 cup tahini
- 1/4 cup lemon juice
- 2 tablespoons Extra Virgin Olive oil
- 1/2 teaspoon ground cumin
- 1 small clove of garlic minced
- 2-3 tablespoons water
- ground paprika or sumac and a lot more olive oil for serving
Start by whipping tahini and lemon juice in the food processor for about 30 seconds. Scrape the tahini from the bowl, and whip it again for another half minute. You can do this a couple of times to add volume and fluff to your hummus.
Stop the processor, and add cumin, olive oil, and garlic to the blend. Then start processing again for about 30 seconds.
Add half of the chickpeas to the mix and process for one or two minutes. Pause to scrape the blend on the bowl. Add the remaining chickpeas and process it again for another minute.
You may see chunks of chickpeas. The hummus also isn't as light as you want. No need to panic, add water with your food processor is on until it reaches the consistency you like. The last step before serving is to add salt to taste.
You can serve hummus immediately with a generous topping of olive oil and ground sumac or paprika. Store the remaining hummus in the fridge, it will stay good to consume for a week.
