Casserole with Rotisserie Chicken

It’s always possible to make a casserole with rotisserie chicken. It means that you can make use of your leftover rotisserie chicken into a tasty use – and you make an alternative tasty casserole as a result. It’s a comfort food that is pretty easy (and fast) to make. Even during busy weeknights, you are still able to pamper your family without having to spend a fortune.

Ingredients

  

  • 3 cups of diced rotisserie chicken. But if you don’t have any leftover, you can easily use any cooked chicken.
  • 3 cups of cooked rice
  • 5 ounces of chicken soup cream. If you have another alternative the low sodium type, the healthy cream soup, or others, feel free to use it
  • 2 tablespoons of butter. Melt it
  • ½ cup of corn flakes. Crush them first
  • ½ cup of almonds. They can be slivered or sliced
  • ½ cup of Greek yogurt. If not, mayonnaise can be the alternative
  • ¾ cup of celery preferably diced
  • Pepper and salt; just enough to taste

Instructions

 

  • Heat up the oven. It should reach 350 degrees Fahrenheit
  • Use a baking dish (13 x 9 inch size). Grease it first before you throw in the ingredients. The baking dish can be the 8 x 8 inch or the 9 x 9 inch, but let’s not forget about the corn flakes which can take up extra space.
  • Mix up all the ingredients together within the baking dish
  • Transfer the corn flakes into a sealed bag. Crush them. You just want to break down them to smaller pieces; not into dust.
  • Once your casserole is beginning to form in shape, you can sprinkle it with the corn flakes.
  • Top it off with melted butter. Drizzle it on the top of the casserole.
  • Bake for around 30 minutes. 40 minutes is possible, but it should be the maximum. Or just bake until you have heated the casserole thoroughly.

Notes

If you want other alternatives to corn flakes, you can use French Fried onions, panko, potato chips, Ritz crackers, and even (seasoned) bread crumbs as the toppings.
This rotisseries chicken casserole with rice is a perfect meal if you have a leftover rice as well as the leftover rotisserie chicken. But even if you don’t, that’s completely fine.
You can freeze the casserole. Simply add up the topping just before you want to bake.
If you want to use breadcrumbs, be sure to mix it with butter (3 tablespoons would be enough) before adding it as the topping. If you are using the panko, toss it with a lot of seasons and butter, such as garlic powder and paprika. It would be super delicious.
