Ingredients

  

  • 1.5 cups flour
  • 2 tsp corn starch
  • 8 eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1.5 cups sugar
  • 2 8 oz-packaging of cream cheese make it softened
  • 2 cups heavy cream
  • 1 8 oz-packaging of mascarpone cheese
  • 1.25 tsp vanilla extract
  • ¾ tsp almond extract
  • 3 cups powdered sugar
  • ¾ cup sugar
  • 2 cups water
  • Assorted berries 1.5 cups strawberries; blueberries, blackberries, raspberries—each 1 cup

Instructions

 

  • Prepare 2 round cake pans. Have each covered in parchment paper. Spray with nonstick spray.
  • Using the bowl of stand mixer, beat all eggs and whisk it until it turns foamy. Add sugar gradually as you increase the whisking speed.
  • Once the mixture turns airy and fluffy, include the vanilla extract.
  • Stop the mixer. Then into the batter, sift flour, corn starch, and baking powder. Fold these into the batter without doing it excessively to keep the batter airy as much as possible.
  • Split the batter into two pans. Then, bake it at 350oF for just 20 minutes.
  • Cool the cake. It’s best to cool the cake overnight. Once you cool it down, you can slice each cake into halves horizontally.
  • Now, combine the cream cheese, powdered sugar, vanilla and almond extract using the mixer.
  • Beat the heavy cream separately using an electric mixer.
  • Then, mix the heavy cream with the cream cheese batter altogether. Let it cool in the fridge for 1 hour at least.
  • While it cools down, make your simple syrup using 2 cups water and the ¾ cups of sugar. Simply join both ingredients and bring it to a boil until the liquid thickens. Use low heat to make the syrup. Let cool completely once the syrup is made.
  • Use the syrup to spray one side of each cake.
  • Now, assemble all the ingredients: spread the cream cheese filling (cooled) then add the berries.
  • Stack another layer and do the same as mentioned in step 12 until you get 4 layers. Then, cover the cake side and the top with the remaining fillings. Decorate with the remaining berries so you’ll get a beautiful white cake with a pretty pop color.
