- 8 eggs

- 1.25 tsp vanilla extract
- ¾ tsp almond extract
- 3 cups powdered sugar
- ¾ cup sugar
- 2 cups water
- Assorted berries 1.5 cups strawberries; blueberries, blackberries, raspberries—each 1 cup
Prepare 2 round cake pans. Have each covered in parchment paper. Spray with nonstick spray.
Using the bowl of stand mixer, beat all eggs and whisk it until it turns foamy. Add sugar gradually as you increase the whisking speed.
Once the mixture turns airy and fluffy, include the vanilla extract.
Stop the mixer. Then into the batter, sift flour, corn starch, and baking powder. Fold these into the batter without doing it excessively to keep the batter airy as much as possible.
Split the batter into two pans. Then, bake it at 350oF for just 20 minutes.
