  • 4 chicken breast cutlets around 1.5 lbs, 0.25-inch thick.
  • 0.5 tsp salt
  • 2 tbsp olive oil
  • 0.25 tsp black pepper
  • 0.25 cup fresh parsley chopped
  • 0.25- cup Parmesan cheese shredded
  • 0.75 cup mozzarella cheese shredded
  • 1 can of diced tomatoes. Drain the water.
  • 1 tbsp olive oil
  • 1 clove garlic minced/pressed
  • 0.25 tsp black pepper
  • 0.5 tsp Italian seasoning. Alternatively you can use oregano and basil (both of which you need 0.25 tsp).

  • First, make the topping of bruschetta. You can simply mix all ingredients in a small/medium mixing bowl. Put it aside.
