  • 1 can (14-oz) garbanzo beans, drained and rinsed properly
  • 2 large-sized carrots, sliced or diced
  • 1/2 cup beans, cut small
  • 1/2 small cabbage, shredded
  • 1 (14-oz) canned tomato, diced
  • 1 small-sized yellow squash, sliced
  • 1 1/2 cup red potatoes, washed and diced
  • 1 small-sized zucchini, sliced
  • 2 bay leaves
  • 1/2 cup parsley, chopped
  • 1/2 cup basil, chopped
  • 2 tablespoons grated parmesan cheese
  • Salt and black pepper to taste

 

Instructions:

  1. Start the Carrabba’s minestrone soup recipe by preparing a large pot. Put it over medium-high heat.
  2. Add in vegetable oil and then mix together diced white onion and minced garlic. Sauté them until they are translucent and fragrant.
  3. Then, add in the celery and carrots. Cook until they are soft (approximately 5-7 minutes).
  4. After that, add in green beans, zucchini and cabbage. Cook for 1-2 minutes.

  7. Add in the blended beans to the soup mixture followed by diced tomato, bay leaves, parmesan cheese and the rest of the beans.
  8. Allow the soup to boil and then simmer for 40 minutes. Adjust the taste with salt and freshly ground black pepper.
  9. The soup is ready to serve.
