Cooking instructions:

  1. Preheat the oven in 350 F
  2. Prepare bowl and stand mixer. Put sugar, molasses, ginger, butter, baking soda, salt, lemon zest, nutmeg, and cinnamon. Mix them slowly at low stirring. Keep the cream at medium and soft texture.
  3. After 5 minutes low speed, pour flour at once then mix it again to turn fully incorporated.

  1. This recipe was just ok. As written the dough was powdery and hard to form into balls (even with an additional 1 T butter. The first half did not spread, so I added another 2 T butter and 1T sugar.

    If I were to make them again I would add 3 T butter and sugar at the start and use more ginger in the dough (maybe an extra teaspoon). For the filling I would do half butter and half coconut oil but only 1 T of each.
