Ingredients:

  • 1 lbs Italian-styled chicken sausage, removed from casing
  • 1 cup uncooked rice, washed
  • 1 large can (48 oz) chicken broth
  • 1 cup fresh red tomatoes, washed and diced
  • 3 cups fresh spinach leaves, washed and chopped
  • A handful fresh sage, chopped
  • Salt and black pepper to taste
  • Olive oil

  1. In a non-stick pan, add in olive oil and cook sausages on it until they are completely cooked and browned. Set it aside.
  2. Prepare a stew pot. Into the pot, add in chicken broth and cooked sausages. Turn on the heat on low and let the mixture simmer.
  3. Into the pot, add in tomato, spinach, and sage (if you do not like too strong sage flavor, add 5 leaves only or less).
  4. Let the soup cooked for 2 hours, simmering on low heat.
  5. After 2 hours, increase the heat and pour in the uncooked rice. Stir them well.
  6. Leave it for another 15-20 minutes until the rice is cooked and soft.
