Ingredients:

  • 1 pound mafaldine pasta
  • 1 pound shrimp, the large ones
  • 1 lemon
  • 3 tbsp butter, the unsalted one
  • 1 tbsp tomato paste
  • ½ tsp red-pepper flakes
  • 1 minced shallot
  • ¼ cup of crème fraiche
  • Coarse salt
  • ½ cup of dry white wine

 

Cooking Instructions:

  1. Remove the shells and heads of the large shrimps and reserve them. Slice each of them in a half then refrigerate them.
  2. Over medium heat, melt 1 tablespoon unsalted butter in a sauté pan. Put the shrimp shells and heads as well as tomato paste into the pan and stir them.
  3. Cook for about 2 minutes until you see the shells turn into pink. Pour ¼ cup of dry white wine into the pan and cook it until reduced in approximately one minute.
  4. Pour 4 cups water and let it to boil and simmer for about 30 minutes. Prepare a sieve and strain the shrimp stock.
  5. The next step in mafaldine with shrimp and lemon recipe is to boil water. Prepare a large pot of water and add salt. Let’s cook the pasta for 2 minutes less than instructed on its package. During last 5 minutes, add lemon slices and drain them.
  6. Melt 2 tablespoons unsalted butter over medium heat. Put the minced shallot and pepper flakes. Cook and stir them. You need only 1 minute.
  7. Now, cook the shrimp until it gets pink color.
  8. In pan, add the remaining wine and shrimp stock. Simmer for about 2 minutes. Add crème fraiche and whisk them.
  9. You can add pasta and some slices of lemon. Remove the heat and serve it.
