Poached Eggs in Muffin Tin with Potato Hash

Ingredients and Tools

  • 6 eggs
  • Salt
  • Black pepper
  • 6 tablespoons of water
  • 1 tablespoons of green onion, sliced
  • ¼ teaspoon of smoked paprika
  • ½ cup of green bell pepper, chopped into dice
  • ½ cup of red bell pepper, chopped into dice
  • 1 cup of red onion
  • 1 tablespoon of garlic, diced
  • 2 pounds of sweet potato
  • Olive oil
  • A muffin tin
  • Oven

Baking Instructions:

  1. Preheat oven to 180oC.
  2. Crack the eggs and put them in the cups of muffin tin.
  3. Sprinkle the pepper and salt on top of eggs.
  4. Put 1 tablespoon of water in every cup.
  5. Bake them for about 10 to 15 minutes in the oven.
  6. Take out the muffin tin and let the poached eggs in muffin tin for one minute.
  7. Scoop the eggs with a spoon and save them for later.
  8. Heat a pan in a medium heat.
  9. Put two tablespoons of olive oil and drop the red onions. Sauté them for about one minute.
  10. Drop the garlic and sauté it for one minute.
  11. Add 1/4 teaspoon of black pepper, ½ teaspoon of salt, and the sweet potatoes in the pan.
  12. Stir them until the potatoes become tender.
  13. Put the bell pepper and sauté the mixture for about two minutes.
  14. Turn off the heat, and add the smoked paprika to the pan. Mix them.
  15. Serve the potato hash in the serving plate.
  16. Add the muffin tin eggs to the plate and add green onions, salt, and black pepper as the finishing.

The results of the poached eggs in muffin tin recipe can be served for four portions. Since poaching the eggs is easy and fast, it can be done after the potato hash is ready. The duration in baking the eggs is various in lengths and depends on your preference. Bake it for 13 to 15 minutes if you like the cooked one.
