  • ¼ tsp ginger, ground
  • ¼ tsp black pepper, ground
  • 2 tbsp fresh cilantro
  • 1/3 cup green onion slices
  • 1 ounce brown rice

Cooking Directions:

  1. Preheat your oven until 450 degree Fahrenheit. Put foil on to large baking sheet, coat with cooking spray. Set aside.
  2. Peel the shrimp and remove the vein. Leave the tails intact.
  3. Put the egg whites that have been beaten lightly in shallow dish. In another dish, put coconut, ginger, pepper, and crushed cracker. Mix together. Dip shrimps into egg, turn gently until fully covered.
  4. Dip in to coconut mixture, press gently to make the coat attach firmly. Leave the tail uncoated. If you want to make thicker coating, repeat to dip into the egg and coconut mixture.
  5. Put shrimp on the baking sheet. Bake for 8 minutes or until the color turns yellowish brown.
  6. While waiting for the shrimp, cook the rice according to the directions on the package. Whenever ready, serve in a bowl.
  7. Prepare a small bowl, put mango and onions. Stir evenly.
  8. Serve the rice along with shrimp and mango. Use cilantro chops to sprinkle the dish.
