Preheat oven to 375. Peel, and slice beets 1/4 inch thick. Toss with extra virgin olive oil, coarse kosher salt and fresh ground black pepper (I prefer Tellicherry Peppercorns). Roast beets for 30 minutes on a rimmed baking sheet. Yum.
